A classic Italian dish featuring breaded chicken breasts topped with marinara sauce and melted cheese, often served with pasta or salad.
Preheat your oven to 375°F (190°C).
Season the chicken breasts with salt and black pepper on both sides.
Set up a breading station: place the flour on a plate, beat the eggs in a bowl, and put the breadcrumbs on another plate.
Dredge each chicken breast in flour, shaking off excess, then dip into the eggs, and finally coat with breadcrumbs, pressing to adhere.
In a large skillet, heat vegetable oil over medium heat. Add the breaded chicken breasts and cook for about 4-5 minutes per side until golden brown.
Transfer the cooked chicken to a baking dish. Spoon marinara sauce over each piece of chicken, and sprinkle with mozzarella and Parmesan cheese.
Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden brown.
Serve hot, ideally over pasta, with a side salad.
