METHOD

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 1 teaspoon of salt.

Step 3

Add 1/2 cup of cold cubed unsalted butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.

Stir in 1 1/2 cups of shredded sharp cheddar cheese until evenly distributed.

Step 5

In a small bowl, beat together 1/2 cup of whole milk and 1 egg. Pour the mixture over the dry ingredients and gently stir with a fork until the dough just comes together. Do not overmix.

Turn the dough out onto a lightly floured surface and knead it gently a few times. Pat it into a round disc about 1 inch thick.

Step 7

Using a sharp knife, cut the disc into 8 wedges, like a pie, and place them a few inches apart on the prepared baking sheet.

Step 8

Bake in the preheated oven for 20 minutes, or until the scones are golden brown, and a toothpick inserted into the center comes out clean.

Transfer the scones to a wire rack to cool slightly. Serve warm, with butter if desired.
