METHOD

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds and membranes. Lightly drizzle with olive oil and place them cut side up in a baking dish.

Step 3

In a large skillet over medium heat, heat the olive oil. Add the diced onion and minced garlic, sautéing until soft and fragrant, about 3-4 minutes.

Add the ground beef or turkey to the skillet, cooking until browned. Season with Italian seasoning, salt, and pepper to taste.

Stir in the cooked rice and canned diced tomatoes, simmer for another 5 minutes. Taste and adjust the seasoning if needed.

Spoon the meat mixture evenly into the hollowed bell peppers. Top each pepper with shredded cheddar cheese.

Step 7

Cover the baking dish with foil and bake in the preheated oven for 35 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
