METHOD

Step 1

Soak saffron threads in a small bowl with 2 tablespoons of warm water for at least 10 minutes.

In a large paella pan or wide skillet, heat olive oil over medium heat. Add chopped onion and red bell pepper, sauté until soft, about 5 minutes.

Stir in the minced garlic and sliced chorizo, cooking for an additional minute until fragrant.

Add the rice to the pan, stir to coat it well with oil and vegetables for about 2 minutes.
