METHOD

Step 1

In a bowl, whisk the eggs with a pinch of salt and pepper.

Step 2

Heat a non-stick skillet over medium heat and add butter or oil.

Step 3

Add onions and bell peppers to the skillet and sauté until soft, about 3-4 minutes.

Step 4

Pour the beaten eggs into the skillet. Stir gently, scraping across the bottom of the skillet with a spatula to form curds. Cook for another 2-3 minutes until eggs are mostly set.

Step 5

Stir in the cooked sausage crumbles and half of the cheese into the eggs and cook for 1 more minute until everything is heated through and cheese is slightly melted.

Step 6

Warm the flour tortillas in a microwave or on a skillet until they're pliable.

Step 7

Divide the egg mixture among the 4 tortillas. Sprinkle the remaining cheese evenly on top.

Step 8

Fold in the sides of each tortilla and then roll up tightly like a burrito.
