METHOD

Step 1

In a large bowl, mix together 1/4 cup of olive oil, 2 tablespoons of lemon juice, 3 cloves of minced garlic, 2 teaspoons of dried oregano, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.

Add the lamb cubes to the marinade, turning to coat. Cover and refrigerate for at least 1 hour, or up to 8 hours for maximum flavor.

Preheat your grill to medium-high heat.

Thread the marinated lamb cubes onto skewers, leaving space between each piece.
