METHOD

Step 1

Heat a tablespoon of vegetable oil in a large pot over medium heat. Add minced garlic and ginger and sauté until fragrant, about 1 minute.

Step 2

Add the ground pork to the pot and cook until browned, breaking it apart with a spatula, about 5 minutes.

Step 3

Stir in the miso paste and chili paste, thoroughly mixing with the pork.

Step 4

Pour in the chicken broth and bring to a simmer.

Step 5

Lower the heat and let the broth simmer gently for 10 minutes to let flavors meld.

Step 6

In a separate pot, boil water and cook ramen noodles according to the package instructions. Drain and set aside.

Step 7

Once the broth has simmered, add soy sauce to taste.

Step 8

Divide the cooked ramen noodles into bowls, ladle the spicy miso broth over them.

Step 9

Top each bowl with scallions and drizzle with chili oil before serving.

Step 10

Enjoy your Spicy Miso Ramen warm, adjusting chili oil for extra heat as desired.
