METHOD

Step 1

Cut the pork belly into bite-sized pieces.

Step 2

Slice the onion and mince the garlic cloves.

Step 3

In a pot, heat sesame oil over medium heat. Add the pork belly and cook until lightly browned.

Step 4

Add kimchi to the pot and stir-fry for 2-3 minutes until it softens and becomes fragrant.

Step 5

Add minced garlic and sliced onions to the pot and continue cooking for another 2 minutes.

Step 6

Stir in gochugaru for added spice, and pour in the water, bringing the mixture to a simmer.

Step 7

Continue simmering for about 15 minutes so the flavors meld together.

Step 8

Cut the tofu into cubes and add it gently to the pot along with soy sauce, salt, and pepper to taste.

Step 9

Simmer for another 5 minutes until the tofu is heated through.

Step 10

Garnish with chopped green onions and serve hot with steamed rice.
