METHOD

Step 1

Preheat your oven to 350°F (180°C) and grease a 9-inch round cake pan.

Step 2

In a medium bowl, whisk together 1 and 1/2 cups of all-purpose flour, 2 tablespoons of matcha green tea powder, 1 and 1/2 teaspoons of baking powder, and a pinch of salt.

Step 3

In a large bowl, beat 1/2 cup of softened unsalted butter with 3/4 cup of granulated sugar until light and fluffy.

Step 4

Add 3 eggs to the butter mixture, one at a time, beating well after each addition. Mix in 1 teaspoon of vanilla extract.

Step 5

Gradually add the dry ingredients to the wet ingredients, alternating with 1/2 cup of milk, beginning and ending with the dry ingredients. Mix until just combined.

Step 6

Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes until a toothpick inserted into the center comes out clean.

Step 7

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 8

For the ganache, in a small saucepan over medium heat, bring 1/2 cup of heavy cream to a simmer. Remove from heat and add 6 ounces of chopped white chocolate. Let it sit for 3 minutes, then stir until smooth and melted.

Step 9

Once the cake is cooled, pour the ganache over the top, letting it drip down the sides. Let it set for a few minutes before serving.

Step 10

Slice and enjoy your delicious Matcha Green Tea Cake with a cup of your favorite tea!
