METHOD

Step 1

Heat a large pan or wok over medium-high heat and add 1 tablespoon of sesame oil.

Step 2

Add the chopped scallions and minced garlic. Stir-fry until fragrant, about 1 minute.

Step 3

Add the kimchi and stir-fry for another 3 minutes until it's heated through and slightly caramelized.

Step 4

Push the kimchi mixture to one side of the pan and crack the eggs into the empty space. Scramble the eggs until just set, and then mix in with the kimchi.

Step 5

Add the cooked rice to the pan and stir to combine everything evenly, cooking for about 2 minutes.

Step 6

Pour in the soy sauce and drizzle another tablespoon of sesame oil over the rice. Toss thoroughly to ensure everything is well mixed.

Step 7

Transfer the fried rice to plates or bowls and garnish with sesame seeds and additional chopped scallions.
