METHOD

Step 1

Boil a large pot of salted water and cook the spaghetti according to package instructions until al dente.

Step 2

While the pasta cooks, finely slice the garlic.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and chili flakes, cooking gently until the garlic is golden brown (about 2-3 minutes).

Step 4

Drain the spaghetti and reserve a cup of pasta water.

Step 5

Add the drained spaghetti to the skillet with garlic oil, tossing to combine. If the pasta seems dry, add a bit of the reserved pasta water.

Step 6

Season with salt to taste and stir in chopped parsley for freshness.

Serve hot, topped with grated parmesan cheese if desired.
