METHOD

Step 1

Cook the ramen noodles according to package instructions. Drain and set aside.

Step 2

In a large pot, heat vegetable oil over medium heat. Add the chopped onion and sauté until soft and translucent.

Step 3

Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

Step 4

Add the curry powder to the pot and stir constantly for about 1 minute to release its flavor.

Step 5

Pour in the vegetable broth and coconut milk, stirring to combine. Bring to a gentle simmer.

Step 6

Add the sliced carrot and cubed potato to the pot, cooking until vegetables are tender, about 15 minutes.

Step 7

Stir in the frozen peas and soy sauce, and let cook for another 5 minutes.

Step 8

Add the cooked ramen noodles to the curry broth and stir to combine.

Step 9

Remove from heat and stir in the lime juice.

Step 10

Serve hot, garnishing with freshly chopped cilantro.
