METHOD

Step 1

Preheat your oven to 425°F (220°C).

Step 2

In a small bowl, mix together the olive oil, minced garlic, lemon juice, salt, black pepper, and chopped fresh thyme.

Pat the chicken dry with paper towels and place it in a roasting pan.

Step 4

Rub the olive oil mixture all over the chicken, making sure to get under the skin for maximum flavor.

Cut the lemon into wedges and place them inside the cavity of the chicken along with a few thyme sprigs.

Wash the potatoes and cut them into quarters. Toss with olive oil, salt, and pepper in a separate bowl, then scatter them around the chicken in the roasting pan.

Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (75°C) and the juices run clear.

Step 8

Let the chicken rest for 10 minutes before carving.
