METHOD

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the bolillo rolls in half lengthwise and place them cut-side up on a baking sheet.

Step 3

Spread a generous amount of refried beans on each roll.

Step 4

Sprinkle the grated Mexican cheese blend evenly over the beans.

Step 5

Place the baking sheet in the preheated oven and bake for about 8-10 minutes, or until the cheese is melted and bubbly.

While the molletes are baking, heat a non-stick pan over medium heat. Add a little butter or oil and fry the eggs sunny-side-up until the whites are set but the yolks are still runny, about 4-5 minutes.
