METHOD

Step 1

Pour 2 cups of wine into a medium saucepan.

Step 2

Stir in 1 3/4 cups of sugar.

Step 3

Heat the mixture over medium heat, stirring constantly until the sugar is completely dissolved.

Step 4

Increase the heat to high and bring the mixture to a full rolling boil.

Step 5

Boil for 1 minute, stirring frequently.

Step 6

Remove from heat and add in 1 pouch of liquid fruit pectin.

Step 7

Stir the mixture for 2 minutes to ensure the pectin is fully incorporated.

Step 8

Skim off any foam that forms on top of the jelly.

Step 9

Pour the hot jelly into sterilized jars, leaving about 1/4 inch of head-space.

Step 10

Seal the jars with lids and let them cool to room temperature.

Step 11

Refrigerate the jars and allow the jelly to set overnight before serving.
