Using a spiralizer, create zucchini noodles from the zucchini.
In a food processor, combine basil leaves, pine nuts, Parmesan cheese, garlic, salt, and black pepper. Pulse until finely chopped.
With the food processor running, slowly drizzle in olive oil until the pesto is smooth and creamy.
In a skillet over medium heat, add the zucchini noodles and cook for about 2-3 minutes, until just tender.
Remove from heat and toss the zucchini noodles with the pesto until well coated.
Serve immediately, garnished with halved cherry tomatoes and extra Parmesan cheese if desired.
