METHOD

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Butter a pie dish or shallow baking dish and scatter the cherries evenly over the bottom.

Step 3

In a mixing bowl, whisk together the flour, sugar, and salt until well combined.

In another bowl, whisk the eggs, milk, and vanilla extract until smooth.

Gradually add the wet ingredients to the dry ingredients, whisking constantly to avoid lumps. The batter should be smooth and slightly thick.

Pour the batter over the cherries in the baking dish.

Bake in the preheated oven for 35-40 minutes, or until the clafoutis is puffed and golden brown on top, and a toothpick inserted in the center comes out clean.

Remove from the oven and let it cool slightly before serving. It will deflate a bit after coming out of the oven, which is normal.
